Known as licorice mint, elk mint, giant hyssop, or lavender giant hyssop. In the mint family. Native to the Great Plains of North America. Despite it’s name, it is neither anise nor hyssop.
Cuisine: Fresh leaves can be used raw in a salad or cooked, often with fish, lamb, beef, or citrus and other acidic fruits. Sometimes baked into bread, cookies, or custard.
Mixology: May be used in distillation processes, although it is more commonly used as a mixer or a garnish.
Pairings: Citrus, berries, peaches, watermelon, pineapple, apricots, honey, mint, vanilla, and heavy cream.
