Also known as bee ball, it is In the mint family. Native region stretches from the Mediterranean to Central Asia. It was first brought to Spain by the Moors. It’s flowers are popular for attracting bees.

Cuisine: Although best used fresh to bring a lemony brightness to any dish, works especially well in infusions. Can be used to make tea, and goes well with fruit bowls.

Mixology: Lemon balm is used in the distillation process of absinthe, vermouth, and other herbal liqueurs. Rumor has it that it is one of the secret ingredients in Chartreuse and Benedictine. An excellent addition to any cocktail in need of a lemon punch. Great addition to iced tea cocktails.

Pairings: Poultry and fish, as well as honey, citrus, summer squash, cucumber, and cream.
